The blades in this set are chrome-vanadium steel (X50CrMoV15) forged from a single piece of steel and are extremely sharp. The knives are sharpened according to Wüsthof's PEtec technology. This means that for each blade the sharpening angle is determined with the help of a computer and they are perfect. The blade is then laser sharpened on a wet whetstone. After careful inspection each knife will leave the production line, for a long life of intensive use. The handle is made of black POM, an extremely sustainable and hygienic plastic.
