The Miyabi 5000FCD blades are composed of 49 layers of stainless damask steel, with a central blade in Fine Carbide FC61 with a Rockwell hardness of about 61-62 Hrc.
The black laminated, treated Pakka Wood handle, extremely robust material, resistant to environmental conditions, with high dimensional stability, wonderfully balanced and has a steel handle finish with the Miyabi logo imprinted on it.
